Jørgen Jensen holds the Professorship in Sports Biology at Norwegian School of Sport Sciences.
Jensen was awarded his PhD in 1993, followed by a postdoc at University of Oslo. Jensen worked at the National Institute of Occupational Health (1997-2009), studying basic mechanisms regulating glucose uptake and glycogen metabolism in skeletal muscles.
Currently, the research focus regulation of carbohydrate metabolism during and after exercise; these studies includes the role of caffeine and protein intake on endurance performance. Furthermore, the effect of exercise on insulin sensitivity is studied.
